Casa De Sarasaができるまで 第3話:教わったのは、技術じゃなかった
In 2017, we finally found the space.
Once I'd decided to build the restaurant, I knew I had to learn from the source.
So I went back to Mexico. This time, with Kentaro.
I leaned on the friends I'd made through DJ tours.
A chef who ran a taco shop, who I'd first met in the crowd at one of my events.
A fellow DJ who owned restaurants. Cooks.
Here was this person from Japan saying she wanted to bring Mexican food home, and they welcomed me warmly and shared their knowledge and connections without holding anything back.
That's the thing about Mexicans. They're the best.
How to think about food. And the pride they carry for tacos.
Things you cannot learn from books or the internet, taught to me directly, on site.
They even showed me how to break down a goat hanging from a hook. Not something you get to experience in Japan.
Looking back, I think I learned the spirit more than the technique.
At night, the recipe sessions began.
I wanted to bring that feeling home to everyone in Japan. That was the whole drive behind those late-night experiments.
Make a salsa, taste it. Make a taco, taco’bout it.
Before we knew it, it was the middle of the night.
What I'm most grateful for is that the amigos shared everything they knew.
Recipes, you can find anywhere these days.
But culture and ways of thinking only travel from person to person.
Which is why, even now, I think those late-night conversations are the most valuable thing I came away with.
They accepted a foreigner as one of their own, and they cheered me on.
I wanted to live up to that.
Failure was not an option.
I still remember thinking exactly that.
Behind the flavor of Casa De Sarasa is all that time spent with all those amigos.

2017年、ついに物件が見つかりました。
店をつくると決めたからには、本場で学びたい。
そう思って、わたしはもう一度メキシコへ向かいました。今度は、Kentaroくんを連れて。
頼りにしたのは、DJツアーを通じて知り合った仲間たちです。
イベントのお客さんの中にいた、タコス屋を営むシェフ。レストランオーナーをしていたDJ仲間。料理人たち。
日本でメキシコ料理を伝えたいと語るわたしを、彼らは温かく迎え入れ、惜しみなく知識とコネクションを分けてくれました。
そういうところ、メキシコ人は本当に最高です。
現地で教わったのは、タコスのつくり方だけではありませんでした。
なぜ、そのつくり方をするのか。
なぜ、その土地でそのタコスが生まれたのか。
食に対する考え方。そして、タコスに対する誇り。
本やインターネットでは学べないことを、現場で直接教えてもらいました。
吊るされたヤギを解体するやり方を教わったりもしました。日本ではなかなか経験できないことです。
いま思えば、技術以上に、精神を学ばせてもらった気がします。
夜になると、レシピ開発が始まります。
感動した味を、日本のみんなに届けたい。その一心で、夜な夜な実験を繰り返しました。
サルサをつくっては味見。タコスをつくっては議論。
気づけば深夜。
本当にありがたかったのは、アミーゴたちが惜しみなく知識を共有してくれたことです。
レシピだけなら、手に入る時代です。
でも、文化や考え方は、人から人へしか伝わらない。
だからいまでも、あの夜な夜なの会話が、一番の財産だと思っています。
異国から来たわたしを、彼らは仲間として受け入れ、応援してくれました。
その期待に応えたい。
絶対に失敗できない。
そう強く思ったことを、いまでも覚えています。
Casa De Sarasaの味の裏側には、たくさんのアミーゴたちとの時間が詰まっています。
