How Casa De Sarasa Began Part 2: The Hardest Part Was Convincing People to Join
Casa De Sarasaができるまで 第2話:一番大変だったのは、人を口説くことだった
When I came home from Mexico, I decided I was going to open a taco shop.
But loving something isn’t enough to build a restaurant.
At the end of the day, I was just a DJ. Zero restaurant experience. Nothing that proved I could pull this off.
Still, I started looking for a location and putting the pieces together one by one.
And there was one thing I absolutely needed.
A chef who could make truly great tacos.
As it happened, I’d already met someone before my Mexico trip, during a DJ tour in Japan. A taco chef named Kazu. A mutual friend, Rody, offered to introduce us.
I want to build a restaurant with this person.
Once I thought that, I spent months trying to convince him.
His first answers were vague. Of course they were. Here was a DJ with no restaurant experience asking a man living in Osaka to move to Tokyo and open a place together.
But I didn’t give up.
I wrote a business plan. I searched for a location. Little by little, I tried to give my seriousness a shape.
I wanted him to be able to think that its a real offer.
And eventually, Kazu moved from Osaka to Tokyo, and together we started what became Casa De Sarasa.
Looking back, the hardest part wasn’t finding a location or raising money. It may have been convincing people to believe.
Through all of that preparation, my actual job was still DJing. Weekends meant flying around Japan, busy as ever.
One day, at a gig in the Kansai area, a familiar face turned up.
Kentaro, who always came to my events and always bought my merch.
Between sets, I mentioned it almost casually.
“I’m thinking about opening a taco shop, actually. Looking for staff.”
He was interested right there on the spot.
And then, to my surprise — not long after, he quit his job working on ships and jumped headfirst into launching Casa De Sarasa.
Looking back, that was a pretty bold move.
Kentaro is a quiet person by nature.
But he’s always surrounded by friends, and whenever he opens his mouth, something memorable comes out. He has a strange kind of magnetism.
He sees things from angles nobody else does, and being around him meant constantly discovering something new.
And so the three of us came together.
A DJ with no restaurant experience. A chef who’d come from Osaka. And a man who had just stepped off a ship.
Thinking about it now, it was a reckless team.
But without those three people, Casa De Sarasa wouldn’t exist. That much I’m sure of.

メキシコから帰国したわたしは、タコス屋をやると決めました。
でも、好きというだけで店はつくれません。
そもそも、わたしはただのDJです。飲食の経験はゼロ。何かを証明できるような実績があったわけでもない。
それでも物件を探し、ひとつずつ準備を進めていきました。
そして、どうしても必要だったものがあります。
本当に美味しいタコスをつくれるシェフ。
実は、メキシコへ行く前のDJの全国ツアーで、すでに出会っていた人がいました。タコスシェフのKazuさん。友人のRodyさんが、あいだをつないでくれることになったのです。
この人と店をやりたい。
そう思ってから、わたしは何ヶ月も口説き続けました。
最初の返事は、とても曖昧なものでした。当然だと思います。飲食未経験のDJが、大阪に住む彼に「東京に来て一緒に店をやってほしい」と言っているのですから。
それでも諦めませんでした。
事業計画をつくり、物件を探し、本気であることを少しずつ形にしていきました。
「この人なら大丈夫かもしれない」
そう思ってもらえるように。
そしてついに、Kazuさんは大阪から東京へ引っ越し、一緒にCasa De Sarasaを始めることになったのです。
いま振り返ると、一番大変だったのは物件探しでも資金集めでもなく、人を口説くことだったかもしれません。
準備を進めていたあいだも、わたしの本業はDJです。週末は全国を飛び回る、忙しい日々が続いていました。
ある日、関西でのDJイベントでのこと。
いつもわたしのグッズを買ってくれていた、Kentaroくんが遊びに来てくれました。
イベントの合間に、なんとなく話しました。
「実はタコス屋を始めようと思っていて、スタッフを探しているんだよね」
彼はその場で、興味を持ってくれました。
そして驚くことに、それからほどなくして——船乗りの仕事を辞め、Casa De Sarasaの立ち上げに飛び込んできたのです。
いま思うと、なかなか思い切った決断だったと思います。
Kentaroくんは、普段は静かな性格です。
でもいつも友達に囲まれていて、口を開けば必ず面白いことを言う。不思議な魅力を持った人です。
独特の視点と発想力があって、一緒にいると新しい発見がたくさんありました。
こうして、3人が揃いました。
飲食未経験のDJと、大阪から来たシェフと、船を降りたばかりの男。
いま考えれば、ずいぶん無謀なチームです。
でも、この3人でなければCasa De Sarasaは生まれていなかった。それだけは確かです。
